One of the questions we often hear is “Now that I’ve got these healthy foods, what kind of meals can I actually cook?” Really, the options are just about endless with WIC! With the supplemental healthy food you get from WIC, you can create delicious meals for breakfast, lunch and dinner! You might need a few extra ingredients from around your kitchen to round things out, but with the variety in the latest WIC food list, most of what you need comes right from WIC.
Along with the nutritional education we do for WIC clients, MFHS is also busy gathering a list of recipes you can make with WIC items for our website. While it’s not quite ready yet, we wanted to preview one of these tasty meals with you now, and ask you, our readers, to share your favorite recipes using food from your WIC checks. Hearty Corn Chowder
1 1/2 onions, finely chopped
1/4 cup chicken broth
1 cup water
3 potatoes, peeled and chopped
1/4 teaspoon salt (optional)
1/4 teaspoon pepper
1 can (16 oz.) corn, drained
2 cups low fat milk
Sauté onion in broth. Add water, potatoes and seasonings. Cook until potatoes are tender, about 15 minutes. Mash potatoes slightly. Add corn and milk. Heat until simmering. Be careful soup does not boil. Serve with parsley garnish, if desired. Yield: 4 servings. Each serving contains 4 grams of fat and 235 calories.
